Fresh Fish, Coconut Curry and a Tusker
After traveling for over 12 hours to get to Santo, I was tired and famished to say the least. This is what I finally got to sit down to after all that time.
Yum! Did it taste good!
And, no it was not because I was starving. I had this again, and again and each time it tasted and was just as satisfying. I could probably live off of this meal.
The white rice was steamed to perfection. Janeth, our host (please forgive me if the spelling is incorrect) can Cook!

What Do You Wash it all Down With?
A nice cold Tusker (Vanuatu’s Beer) of course! If you’ve never had a Tusker before, they’re pretty good. They kind of remind me of somewhere between a Bud or a Bud Light.
